• Fermented rice | 1 tbsp |
• Shrimp paste | 1/4 tbsp |
• Turmeric powder | 1 |
• Galangal | enough |
• Salt, fsh sauce, sugar, seasoning | 3 tbsp |

Squeeze fermented rice and shrimp paste through a fne cloth and reserve the liquid. Cut dill into 3cm-long pieces. Pound galangal into pieces

Wash the fsh, patting dry with a clean cloth. Cut fsh into medium pieces. Keep the fat.

Marinate fsh with turmeric powder, galangal,
dill, salt, fsh sauce, sugar, seasoning and the
juice from the fermented rice and shrimp
paste for 2h

Grill marinated fsh over hot charcoal. You
can also fry fsh in a frying pan

Put the fat from the fsh into a pot and cook
until it melts. Add the grilled/fried fsh along
with the green onion and dill into the pot
and stir until the fsh is well-cooked. Enjoy
immediately with roasted peanuts, rice
vermicelli, and shrimp paste mixed with lime
juice.
